I’ve updated to Version 5.1.21.2098.
Pizzicato no longer works for playback for either violin or contrabass when I make new scores.
It has always worked for me in the past.
When I go to Play → Playback Template, I have three options:
Halion Sonic Selection
Halion Sonic Selection, Olympus, GASE
Silence
None of them make pizz work.
When I open old scores, pizz works.
Any ideas of what I need to do to make pizz work again in new scores?
This suggests there is something about the settings in your current file(s) (or a corruption in the file). Can you post it, or an excerpt as well as a diagnostic report so folks can see the specifics of what may be happening?

I just tried assigning the violin to “Violin Solo Combi”, which I know has pizz, but no luck.
Also, under “Apply Playback Template” (the screenshot you used above), I only have the HALion options. There’s no HSO available.
When you reassign an instrument manually, make sure to also select the corresponding Expression Map. In your case it’s called “HSO Violin solo”. But, applying the Playback Template Derrek recommended would be your best choice.
on my system, even reapplying the playback template makes no difference – the Expression Map remains at CC11 dynamics which obviously doesn’t support articulation changes and I don’t have any possibility to select “HSO violin solo”.
That’s not too surprising, though, as I haven’t installed any of the Halion content (as I never use it). I suspect, as Christian suggests, that you may also have not installed the required packages correctly. Of course it’s not necessary to clutter up your hard drive with all the stuff you’re never going to use but the third entry “Halion Sonic Selection – Content” is essential here if you want to use that library and get access to the appropriate EM’s. It’s not enough to just install no.2 “Halion Sonic Instrument”
On the other hand, if older scores using the same template still work, then it’s possible something else is at play here. But anyway, that’s the first thing to check.
I applied the same template Derrek recommended but it doesn’t show up anyway – presumably because the library is missing on my system (unless you have a different explanation) and that’s the reason why I was assuming the same may be the case with the OP
Sounds likely. I’m just surprised the OP can select Violin Solo Combi manually (which is part of HSO) and still not have access to the HSO Playback template.
@btdorico, please do Help > Create Diagnostic Report and attach the resulting zip file here. I think Dorico is unable to find some of the required content, and you’ve at some point suppressed the message it shows at start-up telling you that, so you’re no longer being warned about it. However, the diagnostics do provide some logging that will allow us to work out what the problem (probably) is.
It looks as if the only missing component is Olympus Choir Micro. That would explain why many of the built-in playback templates don’t appear, because they all expect to be able to include the Olympus sounds.
In Steinberg Download Assistant, choose Dorico Pro 5 on the left-hand side, then make sure the Olympus Choir Micro item, indicated in red in the screenshot below, is installed:

I Installed the Olympus Micro Choir.
After I did so, I opened Dorico, created a new score with a single violin.
I went to the Play tab.
Clicked the “Edit Instrument” button on the violin track
Changed to “Violin Solo Combi” from the HSO library (which I know has pizz.)
But when I try to pull down options from the Expression map menu, I don’t see any HSO options (which I see in the scores that have pizz. working).
