every time I open Dorico, i get this:

Try doing Play > Playback Template, selecting (or re-selecting) the correct playback template, then clicking Apply. Does the project then play back correctly?

I mean this one. You’ve somehow deleted the factory templates (or not installed them).
Typically that screen should like this (perhaps without NotePerformer, and with any templates you’ve defined yourself).
When you installed Dorico 3, did you run the Dorico Sounds Installer? If not, you should.

I don’t know where they’re stored, let alone what they’re dependent on. Run the installers again.
