I’m using player names as staff labels on a few instruments, but the pages after the first page do not reflect the correct results and I can’t figure out how to change it.

you have forgotten to rename the short names of the Players that are chosen in Layout Options to display the Player’s name. For example oboe 3. To rename both full and short names of player right click on the player and choose Rename Player.
And by the way oboe 3 doesn’t hold an English horn (jet)
