In dorico 6, I have a 2 bassoons sharing a staff, and when the second basson doesn’t play in a system, I want only the player number for the first basson to appear. I. e. “Bassoon 1” instead of “Bassoon 1.2.” I’m sure this is not difficult, but I cant find how to do it. Help!

I don’t know if there are better methods, but you could insert a Condensing Change with No condensing: the staff label will show only for the one bassoon that is playing (and the other staff will be hidden if you have set hide empty staves in Layout Options). So you have the desired staff label, but you loose the player number label (since there is no condensing from that position):
You need to add the 1. manually as text if desired (using the Player Labels paragraph style, and hidden in the bassoon 1. part). And of course you need to insert a Reset Condensing Change when the bassoon 2 plays again:
