Nice question Giovanni! I tried selecting all the notes with fingering, to modify all the properties in one shot, but unfortunately I couldn’t succeed because there is no specific filter, and if you select all the notes and chords, the relatives properties cannot yield the fingering position…
Now I’m looking for options… but I don’t find the right one…

I don’t think there is a default option. But you can do a select all, filter>notes and chords (filter>deselect any tuplets or grace notes), then set the lower panel property.
This is the important part! Grace notes unfortunately don’t behave like normal notes…

No. It means no fingering change to grace notes only. The removal of tuplet (signs) from the selection is only needed to ensure the notes properties are visible in the lower panel.
True Janus! (In fact I didn’t have any tuplet in my test). Many thanks, now it’s clearer to me why tuplets, because signs cannot have fingering. Remains the doubt for graces because they can be fingered, and, if selected, the fingering property appears…
Ciao @Alberto_Maria, adding to what @Janus said, you can select all and filter only for grace notes, and you can then set the property (Position left of notehead) for all grace notes fingerings at once. (As said grace notes are separate “entities” than non-grace notes, in Dorico)
