Possible to set up 7.1 I/O and route 8 ins to a track?

Hi,
I am not near my DAW or Cubase at the moment but I am anxious to learn if this is possible so I thought I would ask here.

I am wondering if I can set up a I/O definition so that I may combine 8 of my inputs into a 7.1 surround track.

I was reading last night that it can be done for 5.1 but I’d like to use 8 inputs and get them all on one Cubase track.

Thank you for any info you can share.

Cubase is limited to 6 channels per track, I believe.

5.1 or 6.0.
