You could try setting a single beam group shift-M [3]/8
Not naive at all. Took me quite a while to find the solution.
Be in the document that exhibits the problem. Go into Engrave Mode, and select Graphics Editing.
Now go up to the top row of selection choices, click on Write, click on Edit, go down and find Notation, choose Beaming, then choose Beam Together.
I did this in the middle of another passage and had to highlight all the affected notes before the effect would âtake,â but I suspect if you set it that way at the beginning of the piece, it will happen for all notes as you go along.

If you, instead, need this only sporadically in the piece, then you can beam notes manually, as suggested by @L3B . I would suggest to select the notes (it is easier done in Write mode), then right click and choose Beaming > etc⌠from the contextual menu that appears.

Yes, that does it! Now I just need to understand why. The tag that indicates the time signature changes from 3/8(e, 1+1+1) to 3/8(e, 3). I guess my next project is to understand exactly the meaning of that notation.
The brackets tell Dorico to regard the three eighth notes as one unit as opposed to three units within the measure.
As this very question about 3/8 beaming pops up quite often here on the forum, I think itâs time for a feature request: wouldnât it be nice to turn the preferred beaming of [3]/8 vs. [1+1+1]/3 into a notation option?
