Intervals are not possible with a JSON edit, but there’s no reason you couldn’t use Keyboard Maestro (mac) or AutoHotKey (Windows) to create macros that would use the Shift-I popover to type intervals. I’ve just mocked up such a thing in Keyboard Maestro and it’s jolly quick - the only problem is that Dorico bases the octave of the next note on the last pitch it received, like this:
