Record onto only one staff

I’m finding the help files confusing on this. How do I record only one voice on one staff when other staves exist?

And when recording, can I specify that all of the notes that I’m putting in should be in one voice? It tends to find a few notes I hold a little longer and make it into 2 voices.

Have you considered playing slightly detached and then using the “extend to next note” function to connect the notes en masse?
