Is it possible in Dorico to playback a composition (in tablature) and then at the same time record an audio track?
Or maybe in combination with a DAW or something else?

No, there’s no ability to record audio yet. You’d need to export the notation as MIDI to a DAW, using the same VSTs (Note that Noteperformer doesn’t work with DAWs); and then add the audio track there.

Another way is to use an audio program such as Audacity to record the sound while playing your Dorico file. If you find you can’t record, you might need to tweak the setting for recording in your sound settings. Select Loopback or Stereo Mix.
