Recording Multiple Channels

Hello,

To begin with, I’m new with Cubase, so there are a lot of things I don’t know yet.
I’ve been looking for the answer to my question quite long, but couldn’t find the answer.
Sorry if it’s very simple.

I use Kontakt 5 in Cubase. I have Session Strings loaded into Kontakt twice. One is a violin, the other a cello.
They go to a different output. However, I am only able to record MIDI using the main Kontakt 5 channel.

I don’t know what they are called, but I’ll call them subchannels. I can’t record on the subchannel.
So, I’m not able to record just the violin, or just the cello. Only MIDI for the overall KONTAKT, so when I playback, you can hear both.

I have a screenshot attached, so I hope it’s clear what I mean.

Make a new midi channel and assign it to the Violin channel.
The Cello and Violin are set to respond to different midi channels yes?
