I really love the pop ups for creating key signatures, metrics and so on. I just thought it would be even faster and more intuitive to write “###” or “bbb” instead of “3s”, “3f”, “3b” or “3#”.

This is a good idea, but note that when you type 3s (or your proposed ###), Dorico doesn’t know whether you want a minor or major key, which could adversely affect the note spellings you see during MIDI input or subsequent editing.
