You could do this by invoking the Intervals popover with Shift+I and then inputting db=c#,eb=d#,gb=f#,ab=g#,bb=a# (plus whatever you want to do with Fb and Cb).

You can also select the passage, Filter > Notes by Pitch > All flat Notes. Then the keycommand to Respell Using Note Name Below (Alt/Opt+- on English keybaords)

Well, it’s sometimes quicker to use Shift+I, depending on how many different kind of notes you want to respell!

Just a pity, that it needs so much more key strokes than in Sibelius. (There it’s just pressing “Return”). I wonder if a macro would help. Did anyone ever try?
You could record either one of these approaches as a macro, and you can assign a key command to the macro by editing the key commands JSON file.
(Actually, for the Interval popover method, you don’t even need a macro – you can assign a key command directly to that operation in the JSON file.)
Yes, it’s not as easy for sure.
I’d suggest setting a jump bar alias for the filter operation (I have set up ‘ff’). So if I select a passage and type ‘jff’ Dorico will filter all the flat notes.
