Is there an option to have the rest key switched off when you change the note value on the number keyboard, the same as for the dotted note. The dotted switch off when you change the note value.

No, there is no option for that. May I suggest that you could change your workflow? You’re not really supposed to use that key (entering rests) in Dorico. Simply moving the caret and inputting notes at the right place should take care of it…
