Am I correct in thinking that it doesn’t seem to be (currently) possible for force the spelling of rests in percussion parts? See the attached which I would like to force to show a quarter note rest but am unable to do.

I’ve tried and it works (but my options are clearly not the same as yours…)
As usual, post a minimal project that exhibits the problem!
Here, we don’t know the meter used (I’ve supposed it’s 6/8), we have no idea about the options you’ve chosen, nor whether it’s a kit…
Can you share a bigger screenshot, or a part of your Dorico project, so we can see what else is going on there? You’ve got a 5:4 tuplet, but I only count 4 32nd notes, and it looks like there might be another tuplet bracket underneath.
