Rests in pickup bars

I’m trying to create a Chorale exercise for students using piano to create short score.
The chorale I’m using has a one beat pick-up bar. I want to remove the rest from it so that students can write notes into that bar.
How do I do this? I have tried ‘Remove Rests’ and have changed the Layout Options so that empty bars don’t have rests showing.

You could select the rest and custom-scale it down to oblivion.
