On Mac you need to re-install the application unfortunately.
There will be one final revision for 10.0, to be release pretty soon.
On Windows one would normally roll back via “Programs and Features”, but just in case: http://download.steinberg.net/downloads_software/Cubase_10/10.0.40/Cubase_10.0.40_Update_win.exe
