Say I change the tempo of a piece from 120 BPM to 200, and save it.
When I reload the piece, it’s back at 120 BPM, so I have to adjust it all the time.
How do I save a changed tempo?
Is there a setting so that I save the current tempo as default?

To set a tempo, you need to add a tempo mark to the score. Don’t just change the value in the transport control.
You can add a “hidden” tempo mark in the tempo popover, using parentheses, so type (q=200) .
Then you’ll see a tempo signpost in the score.
