Selecting any item in Dorico, moves the properties view to the corresponding values. That does not happen with fingering numbers: View is moved to “Notes and Rests”, so you have to manually scroll the view every time you want to insert or edit a value.
Not a major problem, although could be easily fixed in next maintenance, I suppose… 
No, unfortunately not really, because in fact when you select a fingering you are still really selecting a note, so you will also see all of the properties for a note. Use the little filter control in the lower zone toolbar to filter only the properties that are relevant to you.
