I often need to change the rhythm of the passage I’m writing while I write. While changing note durations seems easy enough, converting existing notes to a triplet doesn’t seem to be an option… is there a way to do this?

Unfortunately we do not yet have an editing operation to take a selection of notes and make them into a tuplet, but this is definitely planned for the future.
