The “Hide Intensity marking” can be set Locally, like any other property.
There isn’t a property to hide hairpins, so you’ll probably have to use colour for that.
So the players won’t play the dynamics that the conductor sees, then…?

No, that is not the purpose.
Often it is useful to put a reminder for the conductor of what the dynamic is (ie after many pages where the dynamic stays the same)
However, on the much smaller player part, you don’t want to have the same dynamic repeated twice.
In Sibelius hide / show is implemented I think for every object.
I think you thought I meant hiding all the dynamics. I meant only as a few of them…
Ben is correct - you can hide dynamics on an individual basis through the properties panel.
See the picture below: I’ve ensured the properties are set to “Locally” (circled in blue), and toggled the “Hide intensity marking” (circled in green). Now the dynamic is hidden from the score (circled in red) but will still be visible in the parts.
