How can I add the name of the arranger beneath the composer name?

In Engrave mode, edit the Page Template. Add the {@projectArranger@} token to the text frame (probably needing to enlarge the frame); or add a separate text frame.

I don’t know if editing Page Templates is possible on iPad or Dorico SE, however.
