After a few months of using Dorico, I came up with my own default setting for layout/engraving options by pressing save as default.
However, it would be nice to have some sort of indication of which settings were Dorico’s Default Layout notation/engraving options (for example, my orange boxes) 
Or you could click “Restore to Saved Defaults” in the bottom left corner.
Yes, however, it restores everything to defaults which is not what I want…
I agree that there is a need for a way of comparing your current options with the defaults, and we have plans in this area for future versions.
