I’ve looked but cannot find information on this: Is there a quick way to solo various sections of an orchestra for playback within the Mixer, or do I have to go into the Mixer each time and click “S” for whatever I want to hear?

Assuming that by “sections” you mean that you want to hear just the winds, just the brass, etc., I don’t think you can do this quickly in the mixer, but in Write mode you can make a marquee selection of notes in multiple staves and start playback, and Dorico will play only those staves.
If you want to solo a single staff, then select multiple notes in that staff.

A helpful extension of @asherber’s point is to make instrument filters. Not only do they simplify viewing only the desired players’/sections’ staves, but selecting all will play only those staves. (Avoiding the need for any marquee selection.)
