I don’t know why I get very narrow empty bars with rest when creating a file from my templates.

You’ve got a default Note Spacing of 1 and ⅛. That’s VERY tight.
Dorico’s default value is 4 spaces – you can take that down to about 3.5, or slightly less. But not below 3, unless you’re doing Renaissance Polyphony with Breves and Longs!
I would definitely change this in your template, but after that: don’t worry about how anything looks until you’ve got all the notes in.
