Is there a way to create a staff name with multiple lines and different fonts to create a layout like this:

The answer depends a little bit on whether each of your percussion players is holding multiple instruments or a single kit that contains several instruments, and also on whether you have Layout Options > Staves and Systems > Staff Labels set up to show instrument names or player names.
If these are percussion kits, and you’re showing instrument names, you can accomplish this easily by expanding the player card in Setup mode, clicking the three-dot menu for the instrument, and choosing Edit Names. There you can format things however you like (mulitple lines, different sizes, etc.).
If you’re using player names, you can get multiple lines, but I don’t think you can get different sizes. Use an external text editor to type the text on different lines the way you want it, then copy those lines. In Dorico, right click on the player card in Setup mode and choose Rename player, and then paste your copied text to replace what’s there. In that edit box and in the Players panel, it will look like it’s a single line, but it will display on multiple lines in the score.
If your setup is different from these descriptions, it would help if you could share your project file here – even an empty copy of your project with your players set up.

I’m working on transitioning from Finale and trying recreate a piece I previously wrote there.
The Percussion 1 staff I have set up as a percussion kit, and Percussion 2 is a player with 2 instruments assigned, so I’m not sure if I can use the same technique for both staff labels?

@mdowden I have a project that is closest by the example. Is for multiple percussion (but I prefer - in this project- use a referencial chart).

How did you change the kit to only use one staff line?
Then select 5-line staff under Layout Options.

You can also put the instrument above and below the line.

What you don’t get is the automatic instrument change labels, though.
This might be the best option without a kit.
Name the first instrument playing, Percussion 1 (Tamb…) since it uses the short name for the instrument changes.
