I’ve just created a new project and am trying to lock in the desired layout now so that I don’t have to spend time on it later. Specifically, I want the title and first pages of the score to be on their own, but Dorico has pushed the first two pages of the score together, treating them as the left and right sides of a double-page spread (see screenshot).
How can I have the double-page spread start from the second page of the score (real page number 3) onwards? I believe I want to see this:

3 4 etc
But instead I see this:

I might then add another page for performance notes between the title and first pages later on, but I assume I can just change the starting page number to accommodate this.
There’s no way for the pages not to be in spreads; it looks like the first page isn’t, but that’s because page 1 is traditionally a RH page. But you can add blank pages to fill out existing spreads.
Here’s one way to get what I think you want, starting from:
The second page is blank because it’s a LH page using the Title template, and the LH page of that template is blank. (Some users also have a Blank template for this purpose, consisting of two blank pages.)
Now I need to get page 3 to display my First page template, so another page template change, also current page only.
In addition to my suggestion above for how to get the layout you want, I think it’s important to point out that doing layout work like this before you have entered any music is generally not considered a good workflow in Dorico. It’s much better to get all of your music in, and then take care of the layout.
If one’s (music) layout is finished, it can be easier to add the title material at the end in a new flow and then reposition it with a PDF program prior to printing.
But as @asherber has said, saving one’s music formatting to last is preferable.
