How can I put in the expression

senza rit.

I tried tempo indication and playing technics , but Dorico don’t accept them

Why not just system text (Alt-Shift-X)?

You can input rit. in the tempo popover, then add senza in the text field in the properties panel (and make sure you input 100% instead of 75% for the playback tempo, in the properties panel)
Or use the dynamics trick : input the same dynamic that note is supposed to be played, and in the properties panel, hide dynamic, and use the prefix or suffix field to input senza rit.
