How can I make sure that the part circled in red doesn’t get cut off?
If you want all these notes to be beamed together, you can right-click (control-click on Mac) and under Beaming, select beam together. I use this so often that I’ve made it into a keyboard shortcut, command-B.
The option you selected controls secondary beams within a beat. I don’t think there’s an option to beam across all beats.
One thing you can do is use Beam Together in each place where this is needed, as @Stephen_Taylor suggested. (Cmd+B is a custom key command that he set up; see here for more info.)
Depending on what the rest of your piece looks like, you could also use an open meter (X in the time signature popover) or a tuplet with the number and bracket hidden.

You can also specify for the time signature that you want notes to be beamed/grouped in a single unit per bar.
Eg in 3/8, enter [3]/8 into the time signatures popover.
Or if this is intended to be an open meter passage, just input an open meter (“X”) and Dorico will beam notes under one single beam automatically.
NB it’s helpful if you can add a bit of information to your posts about why you’re doing something, or what you ultimately want to end up with. Sometimes the solution that you think you’re looking for isn’t the best or easiest one available!
