Is there a formatting option for the {@instrumentlist@} tag I might be missing where I could have it create a second column in the frame I’ve created?
The list is too long and maybe ideally it would consolidate to say for example French Horn (F) 1-4. But I don’t think that’s possible. But I haven’t found any questions about making the list fit in a single frame.
No, but there’s a workaround. You create a second text frame, add the instrument list token. The first box is top justified, the second box is bottom justified. By careful adjustment of frame sizes you can get the right instruments to display in each.

when you say 'Top Justified" you mean due to the manual adjustment of the frame size and not any in built Dorico function ?
Dorico calls it Vertical Alignment… In the page template editor adjust the player list frames like this…
The one on the left is top aligned, the one on the right is bottom aligned. But because the frames are too small to show the whole list, the left frame shows only the top players and the frame on the right shows the remainder.
It’s a bit fiddly to get the frame sizes correct, but it works.
