Transpose from C won't work

What a pity, this was getting quite esoteric: ‘Find the non existing key signature for C major and select it and you will be able to transpose your music magically!’
That could have been a whole new market for Dorico!!!

I have a very similar problem. If I transpose from concert C for an Alto sax, the notes move correctly but the key signature does not change. When I try to add the correct key signature (A maj) it produces F# major. However, if I use the Transpose dialogue and raise the tune by 9 semitones for an Alto sax, then the correct key signature is added.

Again, have you actually inserted a C major key signature in your score? Dorico won’t transpose a key signature that doesn’t exist.
