I just upgraded to Dorico Pro 5 earlier today 9/5/2024. I would like to know how to make the triplet symbol instead of using 3:2.

The tuplet function hasn’t changed much since v.1, so I doubt the update is relevant.
Do you mean you have a problem with creating a triplet, or with the various ways to display triplets you already have in your score?
With the denomination of your triplet already select, type SHIFT + ; + 3. The number of your triplet should just read 3 rather than 3:2.
