You probably have two voices in those measures. Using only one voice would remove the rests.
I do have a few voices this part, as this is a drum part - but I still can’t figure out how to get rid of these rests and the they sometimes appear - there must be a better way than going through the part and manually reducing number of voices where only one is used
Give yourself a shortcut to remove rests (Edit>Remove Rests).
Hidden rests are really just a voice being told it’s ending before the rest (and/or starting after the rest). This can be done automatically as Janus describes. You can also select the note in the voice before the rest and, in the properties panel, set Notes and Rests → Ends voice. Turning the voice colors on is helpful here: View → Note and Rest Colors → Voice Colors.
I have a shortcut for this command, but it doesn’t work in this case for some reason - hence my question…

Perhaps your notes are not in different voices…?
Can you post the project or the relevant section? It’s difficult to diagnose from a screenshot.
The rests are in a different voice - but I don’t know why they are there, or how to hide them
