Is there a simple way to use my Apple Keyboard (or any PC Keyboard) to input MIDI into Cubase?

Enable the virtual keyboard on the transport panel, this is mapped to your standard PC/Mac Keyboard.
Also, see the User Manual pg. 108 for further info.
