Regarding the notation for Drums, Dorico already automatically separates the voices (which is very useful and convenient), but in case I wanted to obtain a result like in the attached example (created with Sibelius, which allows you to choose the various voices manually) how should I do ? If I write the snare and timpani, Dorico automatically connects them to the bass drum voice and leaves the cymbal voice separate, while I would like to link the cymbal voice with that of the snare and timpani and use the bass drum voice (with stem down ) separate.

I don’t see anything here that is even a problem. Please go to Setup mode, reveal the drums player’s card, and in the little menu next to your drum kit>Edit kit. There, you can highlight the different instruments and choose whether you want them to be upstem or downstem. Proceed for all of them so that you’re happy, Apply and done

Ok. Then, you might need to “cheat” a little. You can have two snares, one that is upstem and the other downstem — you’re not limited for what’s in your kit! Same for the timpani.
