on every track, I had a field somewhere in the red square that allowed me quickly to in- or decrease the volume of this channel. It disappeared. How can I make it appear again?

Definitely, you didn’t have this option. In the Track List, there has never been a slider to control the Volume. It has been requested for many, many years.
You can do so in the Inspector > Basic tab.
