Am I able to record multiple remote sources with VST Connect SE?
Also, can I map any audio input from my sound cards to any track in Cubase? So for example, map the output from Skype into a track in Cubase?

You mean record from multiple places? No, it’s a one Studio to one Performer connection.
Not sure if that is possible. You’d need some mapping tool or ASIO device that supports such routing.
But you could probably take the analog output of the onboard sound into an analog input of your ASIO device.
