Snare drum staff, I’m entering notes with the mouse.
I notice that the noteheads have changed from X to O completely arbitrarily.
Did I accidentally touch something?
I can change them back to X by right-clicking → X-shaped (right-clicking → reset doesn’t work), but I’d like to understand the mystery of this sudden change.
You probably just switched Playing Techniques. In Setup, click the 3 dots to the right of the instrument and select Edit Percussion Playing Techniques to view them:
You can then input any of those techniques by cycling through them with Alt+arrow when the input caret is active.

now I understand the Shift+Alt+Up Arrow key combination.
But it’s still strange because in Configuration → Edit Execution Techniques there’s only Technique X and no Technique O.
