Hello,

I write a polytonal music, is it possible to have a different key signature between 2 instruments?

Yes. Invoke the caret on the relevant stave(s), type Shift-K, type your key signature and confirm with Alt/Opt-Enter rather than Enter. This is documented here: Inputting key signatures with the popover
