I am trying to transpose a song which is in A to Ab, but I can’t get the Ab key signature. I 've tried everything in the transposition dialog.

In general, you want to select all (Edit > Select All, or Ctrl/Cmd+A), and then use Write > Transpose to transpose down an augmented unison. Make sure you have “Transpose key signatures” ticked.
If your song has other keys besides A, you may have problems with this method.

Sounds like you got the direction wrong!
You mean the song modulates to Bb? Yes, that will cause problems, because an augmented unison down from Bb is Bbb, and Dorico won’t let you do that.
The usual advice is to transpose in sections. Select everything that’s in A (make sure the key signature is selected) and transpose down an augmented unison (to Ab). Then select everything in Bb and transpose down a minor second (to A).
