What AQ is appropriate when a drummer may use different timings for different things etc? Whats the best way setting for this other than AQ off?

Set it to the smallest time value the drummer is playing. 64th notes will catch all you flams and such.
Outside of that you can leave it off and split the tracks to individual drum parts, kick , snare, hh etc on their own tracks then figure out what value you want to quantize that drum part to.
