Or do you mean the key signature? Press shift-K, type ‘F’ (or ‘d’), then enter. Or find the key signature panel in the right hand side of the Dorico window.
Edit: armure is indeed the French word for key signature.

I just tried but it doesn’t modify the signature key which rest like first screenshot …
And when I go to the right panel it modify the notes but not the key signature …
Maybe I was a bit too concise:
• first, select something at the beginning of your score (for example, the first note or the time signature)
• open the panel marked ## on the right edge of the window
• open the sub-panel for Key Signatures (might be called Arm[at]ure in your version of Dorico)
• choose Major or Minor and use the up/down arrows to select the number of sharps/flats
• then click on the key signature itself: this will insert it at the beginning of the piece.
(Of course, you can also enter a key signature change in the middle of your piece, by selecting something elsewhere.)
The alternative (and much faster) method is:
• select something at the location you want the key signature
• type shift-K (also in French)
• this will show a small popover window; now type ‘F’ for F major (or ‘d’ for d minor if that’s what you need), and press Enter. Dorico will insert a key signature of 1 flat.

Et enfin, je voudrais remarquer que c’est pas grave de poser des questions en français, surtout si la terminologie anglaise vous échappe une fois. Il y a aussi beaucoup d’utilisateurs francophones sur ce forum. Peut-être faites accompagner votre question d’une traduction automatique en anglais.
