Can you assign MIDI notes to a separate MIDI channels in Cubase, like in the video here? (Go to 2:38).

Hi, digalog.
You can. After you record the MIDI notes, select them in the key editor and assign them to any MIDI channel you like on the info line.
If your goal is to control a virtual instrument, perhaps, it would be easier to create an appropriate expression map instead?

… and don’t forget to then change the MIDI output of that MIDI track to “Any” :wink:.
