how to avoid the automated numbering in the part´s (flow´s) heading

Are you talking about the flow numbers that appear in flow headings by default?
Switch to Engrave Mode and double click on the default flow heading in the right hand panel (you may have to expand the flow headings section first). Then delete the {@flowNumber@} token from the text frame and click apply.
