when connected to a slur (or tie, meaning here: Haltebogen) the rhythmic design changes automatically. I would love to connect notes with slurs/ties, but keeping the already given quarter note layout.

You’re referring to a tie (T), not a slur (S).
To prevent Dorico modifying the appearance of the rhythms, you have to use Force Duration (O) to enter the notes. There are also some options in Notation Options–Note Grouping to modify the global behavior of certain rhythms.
In general, you will find that Dorico displays rhythms as they should visually appear. Force Duration should be the exception, not the rule.
