I searched, but again, phraseology was my challenge.
The convention says, we group six quavers together in 3/4 time, and, in groups of four, in 4/4/ time.
How do I “defeat” that, and have the quavers beamed in pairs, regardless on time signature?
Further, how do I enter notes that are normally beamed, as single notes? [More work sheets 
]

Go to the Write menu, Notation options, Beam Grouping category, and select the options you want.
For “single notes”, select the notes, right-click, and select Beaming > Make Unbeamed.

You have to do it for every tine signature, though, or should that be, you “can” do it for every time signature? I’m not sure yet.

No, once the Notation Options are set, they will apply to all appropriate time signatures automatically.
