Chiedo a voi, che conoscete il Dorico 5, come si fa a cambiare la tonalità di un brano per piano già scritto e far scivolare le note nella nuova tonalità; in Finale quando cambiavo la tonalità le note della partitura scendevano o salivano a seconda della tonalità richiesta; in Dorico l’impianto, subito dopo la chiave viene cambiata ma le note rimangono nella tonalità originaria, non prendono atto del cambiamento.

Key Signature changing and Transposition are two different things in Dorico, for good reasons. You can do both independently.
If you just want to transpose music AND the key signature with it, you can do this in the Transpose… dialog box:
