Can I use GuitarRig with my midi keyboard?

I am wondering if I can produce sounds using Guitar Rig via my MIDI keyboard.

As NI says “GUITAR RIG is not a sound generator but a virtual guitar amp and effects processor”, meaning that I need to feed

GUITAR RIG with an audio input signal.

So can I bounce the VSTi track into an audio track and then do the processing using Guitar Rig?

Yes. You can use GR to process any audio signal whether from a guitar, vocal, virtual instrument, etc.
But, to be clear, if your MiDI keyboard does not produce audio, i.e. it is only a MIDI controller, then GR can not directly process the output (because it is only MIDI notes and no actual audio). In that case there must be a virtual intrument between the controller and GR.

no…it is an amp sim not a virtual instrument/guitar

No, for that you would need something like Kontakt and then add a sound library of guitar samples. For example:
