Every time I start a new project I have to go into Engraving Options and tell Dorico to write diminished chords as a circle instead of a flat 5, and to write half diminished chords as a circle and slash rather than as minor 7 flat, etc. How can I save these preferences so I don’t have to do this with every project?
There’s a Save as Default button on the lower left of the Engraving Options window.

You could also explore the library manager… You could use any of your previous files as a reference and import any settings you’d want to reuse from it. For instance, the chords collection in Engraving options 
Everything is there in Dorico 6 to avoid you having to set stuff like that again and again
