Looking for advice on the most convenient way to set-up a choir in an orchestral score.
Do i set up the choir like an instrument doubling? I.E. create an instrument (call it, “chorus”) and put all the voices as doubles? (like an oboe player doubles on english horn) Do i set up each voice on a separate staff? or combine into one staff (SA,TB)? How to get each voice to show up in one part when engraving? How to add a rehearsal piano to the choir part without it showing in the full orchestra score.
This is a nebulous question, but i had it down to a quick process in finale.

First, the easy bit: having a piano in the Vocal Score, but not in the Full Score.
In Setup mode, you can add (or remove) any Players from any layout. So, add the Piano Player, and then select the Full Score, then uncheck the Piano. Select the Vocal Score, and make sure the piano is checked.
There is a “Choir Reduction” instrument, which you can use, putting the Alto and Bass into Down-stem voices.
If you want four separate staves for the vocal score, but one ‘grand’ staff for the full score: that’s a bit more difficult.
Currently, Condensing for vocal parts doesn’t deal with lyrics very well. I’d suggest just copying the music to separate Players for the Vocal Score. (As with the piano, you can select which Players are in your Layouts.)

Don’t see anywhere you can uncheck anything
You didn’t look everywhere. When you select a layout, in the right panel, you can see which players are highlighted in the left panel.
The three zones in Setup mode all work the same way. Select something in one zone and you can see and change which things are assigned to it in the other two zones.
Great! and that does what? So far I have 2 instruments that are highlighted. Doesn’t hide anything in the score.
Okay. Now I see. Similar to what you do in the layout when you choose the defaults of the parts and the score.

I think the file I’m working on is corrupted because all the sounds have been replaced with general midi sounds…
You should be able to reapply a playback template to fix that (Play>Playback Template…)
